What is Green House Meals?
The recipes at Green House Meals are inspired by my garden harvest and micro green farm. All recipes are 100% plant based, easy to follow, and delicious to swallow. My goal is to inspire you to get a plant ton of food onto your plate and into your face. If you are looking for slightly lower carb options, I have marked recipes with (LC). Happy Eating! 😋
Our Story
In the Spring of 2020 my husband, Will, and I changed our diet to plant-based due to health concerns. My otherwise healthy "tri-athalete" husband was recovering from colon cancer and I had gained 55 pounds in four years for no explainable reason. We had been through a big scare with the cancer and were considering the impact our diet was having on our health. Like many who found themselves unexpectedly quarantined, we decided to start a vegetable garden. The garden grew and we began experimenting with microgreens and plant based recipes. Our college age boys, whose diet consisted of corn dogs and captain crunch, were around a lot more than normal and beginning to chow down on the plant based meals. So we saw clear evidence that the meals were not only healthy but tasty too! Within four months of plant-based eating our health problems had disappeared. My weight has returned to normal and my husband is cancer free! My boys both describe a feeling of "lightness" and I've noticed a boost in everyone's mood. The host of benefits gained from eating plant-based motivates me to spread the word and help others make meals that can fix what ails them. Keep cooking with real food and eating more plants! :)
